I don't consciously work for low-carb, but don't think I'm exactly high-carb either. I work for BALANCE via the foods that don't work against keeping good glucose levels. I do work at keeping fat content low. Included in my way of eating are two or three servings of fruit a day; moderate servings of rice, pasta , breads, and potatoes; more veggies than I ate before diagnosis; mainly fish and chicken, some red meat. I never eat rice, pasta, bread, or potatoes without some protein. As for fruit, grapes send my glucose levels soaring, so I don't eat them. If and when my levels are no longer well controled by this way of eating, I'll adjust it. For now, my A1c is 5.4 with no meds, so it's working for me. I could understand him saying that one should eat fruit that is not high on the glycemic scale. I do not low carb. But I do not high carb. I eat essentially a vegetarian diet with small amounts of chicken and fish. I probably eat red meat in small quantities about 4 or 5 times a year. Don't ask me, because I don't measure proportions of carbs to fats etc. I just know that I eat some, but very little fat. I do not low carb and this is not a low carb list. And I am getting just a wee bit annoyed when people keep implying that the list and the people on it are all low carbbers. (I almost wrote " low crabbers " <G>) When looking at the effect of food, one must consider a population as a whole, not isolated individuals. Most people know of someone who smoked their whole life and never got lung cancer. But they are not the norm. It amazes me that the same people who are afraid to use artificial sweeteners because the long term human effect is not certain, will follow diets that exclude fruits but include unlimited amounts of saturated and trans fats and unlimited amounts of animal protein.... when most definitely.... long term control tests have not been done on humans to evaluate those diets on the general public. Most certainly the long term effects on diabetics on such diets has not been done. So, it's old hat.... but....... I am of the opinion, that " all in moderation " is the best diet. BTW, I eat so little red meat because I find that my body just doesn't digest red meat well. It's nothing philosophical. Actually, from I philosophical point of view, I have the most trouble eating lobster.
