Thanks Zoe for a fantastic list of info about grains.

I just have a few things to add.

If they are interested in research, I often refer patients to the following article: If this doesn't put them off wheat, I don't know what will !

Despite all of this, I don't recommend a wheat / grain free diet to all my patients. The diet sheet I give everyone has some information, but it's a step too far for many people. We just talk about cutting down, changing the balance of the diet, or cutting out wheat but not other grains. A workable compromise for some is fermenting their grains (sourdough, or soaking oats / flour in live yoghurt + water overnight etc ). I have some patients who love doing this. Plenty of info on the web. However, where their symptoms are sufficiently serious, I strongly encourage them to give up grains, especially wheat. The results speak for themselves.
