These delectable bites take minimal effort and can be made in less than 15 minutes. They satisfy even the worst chocolate cravings, yet are packed with calcium, magnesium, fiber, and life force too!â…” cup raw almonds6 fresh medjool dates, pitted2 tsp. maple syrup2 tbsp. cocoa and more to coat truffles in1. Grind almonds in a food processor.2. Once finely ground, add dates, maple syrup and cocoa and process until smooth.3. Take a large teaspoonful of the almond chocolate mixture and roll into a ball between your palms.4. Roll in cocoa to coat.5. Continue with steps 2 and 3 until all almond-chocolate mixture is used.Remember, while they are healthier than traditional truffles, like any sweet they should be enjoyed in moderation to prevent blood sugar spikes. Fortunately, the protein and fiber in the almonds helps slow the absorption of the natural sugars into your bloodstream.Adapted with permission from The Life Force Diet (Wiley 2009) by Schoffro Cook.
