Hi Madeleine, Aloe juice is made up of many individual parts or components. These components can be isolated or extracted and are usually referred to as fractions because they are only part of the whole plant. Not all of these fractions are desirable. For example the antrhaqinones and aloins can irritate the digestive tract or skin and are responsible for the bitter taste. These components are found in the thick greenish substance just beneath the rind in the latex layer of the plant. Aloe juice may be a filtered liquid of the entire plant or it may also be from just the filet Some parts are more desirable than others. For example the glycoprotein fraction is considered to be responsible for the wound-healing effect. Lee, M-H. Chung ) It's also important to note that one aloe extract may not be the same as another. In some extracts some of the desirable fractions are concentrated while less desirable factions have been removed. I use an fractionated aloe product that is actually a distillate and does not require preservation or refrigeration. This method adds no water, no preservatives, no chemicals of any kind and removes the less desirable components. It looks and tastes like water.
