A tip for making infused oils: When I have enough flowers immersed in the oil,

before sealing the jar I pour a very small amount of neat rectified spirit

(neutral grain spirit, usually Polish rye), just enough to float on the top of

the oil to the depth of 1/2 to 1 mm layer perhaps. As it evaporates, it will

sterilise the part of the jar above the oil. Like Sally, I leave the menstruum

in the oil. I also repeat this, to resterilise it again, after every few times

I've opened the jar to dispense the oil.
