Some companies use chemicals to produce agave nectar instead of water. Madhava has information on their web site describing the process of extracting the agave nectar from the cactus. Domino now makes an agave nectar but I am unsure of their process. My grocery store now carries Madhava agave nectar. It can also be found at most natural foods stores and on the Madhava web site. I have hypoglycemia and agave nectar doesn't make my blood glucose levels rise sharply causing a crash. It tastes very sweet to me. Any questions ask, I'm not shy. I know you were talking to Byron, but I appreciate knowing more about agave nectar. :-) I'd heard of it, though if I've used it, I don't remember it. But I do remember hearing mixed reports re: safety. What exactly is the deal with agave and how it's produced by some other companies? (because I'm not sure what you're referring to.) Nonetheless I'll surely take your advice and look for the Madhava brand. :-) Is this available in health food stores or somewhere else?
