This could end up a family favorite. Keep some unbaked pie shells in the

freezer for the nights you don't feel like cooking and whip up a couple of these

for dinner...serve with salad or any veggies you would like.

Quiche Lorraine

9 slices bacon, cooked crisp and crumbled

3 eggs

1 - 12oz can carnation evaporated milk

dash of nutmeg

1 cup grated cheese (sharp cheddar is especially good)

1 9 " pastry shell (uncooked)

Sprinkle bacon evenly in the shell, top with cheese, spread evenly.

Beat eggs with evaporated milk, nad nutmeg until mixed but not frothy.

Pour over bacon and bake in preheated 350 oven for 30-40 minutes, until set and

lightly browned.

**you can substitute chopped ham (finely chopped) or cooked brocolli for the

bacon for a different quiche.

If using brocolli, make sure that it is well submerged in egg mixture or it will

burn. It's best to cut it very small for this purpose.
