Guest guest Posted February 17, 2004 Report Share Posted February 17, 2004 Accidental Pork Chop Dinner Family Pack Pork Chops (5 chops or so), frozen solid 1 Carrot 1 stalk Celery 4 cups water 1 garlic bud 1 tbs cilantro or parsley 1/4 tsp basil Salt to taste 1 cup rice Put pork chops in microwave on " Thaw. " Call your best friend and forget they're in there until you smell them cooking. Run to the microwave, remove them, mop up the juice in the bottom. Dump the cooked chops into a medium/large pot. Add 4 cups water, one sliced carrot, one sliced celery stalk, one garlic bud, and spices. Cover; bring to a boil. Turn off the heat. Let stand for 2-3 hours. Strain off 20 oz (2-1/2 cups) liquid and place in 1-qt casserole dish. Add 1 cup rice. Cover dish; place in oven, turn on to 350 degrees. Cook for one hour or till rice is fluffy. Reheat chops briefly in remaining liquid. Thicken to gravy if desired.
