If they have dysphagia or are prone to choking, or on a pureed diet dt edentulous, PB is not allowed (although the flavor could be) unless made really soft and creamy and non-sticky, which can be done. That would be in the preparation instructions. AS my own policy, we're very careful serving PB especially in sandwiches, so I prefer none for snacks bc they eat those unsupevised mostly. I've had chokings and even deaths when this has been disregarded. Of course she also has questioned if I know what I am doing on fluid restrictions and refuses to fix mistakes because it would be " an admission of guilt " . Sign a policy stating it will not be served and give to the director, then if she serves it and someone has issues she is responsible, and let her know that is exactly what you will be doing.
