Orange Yogurt Pancakes

1 cup flour

1 tsp. baking soda

1/2 tsp. baking powder

1/4 tsp. salt

1/3 cup fresh orange juice

1 Tbs. sugar

Grated peel from 1 orange

1 cup plain yogurt

1 egg

3 Tbs. butter, melted

Combine flour, baking soda, baking powder and salt. In a medium bowl, mix orange

juice, sugar, orange peel, yogurt, egg and butter. Add dry ingredients and stir

to make a smooth batter.

Cook on hot greased skillet, turning once. Serve with butter and maple syrup. Or

heat butter and orange marmalade over low heat, spoon over pancakes.

Apple Cheese Dumplings

2 1/4 cups flour

1/4 teaspoon salt

2/3 cup vegetable shortening

6 oz shredded sharp cheddar cheese

6 - 8 tablespoons water

3/4 cup brown sugar

1 teaspoon cinnamon

6 medium apples, peeled and cored, left whole

1/4 cup butter

Heat the oven to 425 degrees F. Combine the flour and salt, mixing well, then

cut in the shortening until the mixture resembles coarse crumbs. Mix in the

cheese and sprinkle with enough water while mixing lightly with a fork, until

dough forms a ball. Divide the dough into three equal portions and roll each

portion, on a lightly flour surface, into a 14 X 7-inch rectangle. Cut each

rectangle into 2 7-inch squares. Combine the brown sugar and cinnamon, then fill

the centers of the apples topping each apple with butter. Sprinkle the remaining

brown sugar mixture over the pastry.Place an apple in each square and fold the

corners to the center, pinching the dough at the top of the apple to seal. Bake

in the preheated oven for 30 to 35 minutes. Serve warm.
