(The Snickerdoodles are an all time favorite of mine since I first made them in

7th grade Homemaking)

Super Snickerdoodles

1/2 cup soft margarine

1/2 cup soy flour, sifted

1/2 cup all-purpose flour

1 cup sugar

1 egg

1/2 tsp pure vanilla extract

1/4 tsp baking soda

1/2 tsp baking powder

1/2 cup whole wheat flour

2 tbsp sugar

1 tsp cinnamon

Pumpkin Banana Bread

1/2 cup vegetable or canola oil

3/4 cup sugar

3/4 cup brown sugar

4 eggs

1 1/2 cups pumpkin

1 1/2 cups ripe mashed bananas

1 1/2 cup yogurt (plain or vanilla flavored)

4 cups flour

2 tsp. baking powder

2 tsp. baking soda

1/2 tsp salt

2 tsp. cinnamon

1 tsp. ginger

1 1/2 tsp. nutmeg

1 cup chopped walnuts (optional)

This quick bread is very moist and flavorful thanks to the pumpkin, bananas and

yogurt. It's great for breakfast, coffee breaks or a simple dessert.

Makes 2 Loaves (8 in. X 3 3/4 in.)

Preheat oven to 350° F. Grease and flour two loaf pans.

In a large mixing bowl combine the oil, sugars, eggs, banana, pumpkin, yogurt.

Beat until smooth.

Sift the dry ingredients together.

Stir the dry ingredients into the wet mixture until well blended.

Pour batter into the prepared pans.

Bake for 45 minutes or until golden brown and a cake tester comes out clean.

Pumpkin Pie Squares

1 cup all-purpose flour, sifted

1 1 lb can pumpkin

1/2 cup quick oats

1 13oz can evaporated milk

1 cup brown sugar

2 eggs

6 tbsp margarine

3/4 cup sugar

1/4 chopped cup nuts

10. 1.0 tsp cinnamon

11. 0.5 tsp ginger

12. 0.25 tsp cloves

Directions:

1. Combine flour, oats, 4 tbls margarine, and 1/2 cup brown sugar in bowl.

2. Mix until crumbly.

3. Press into 13x9 pan.

4. Bake at 350 degrees for 15 minutes.

5. Combine pumpkin, evaporated milk, eggs, 3/4 cup sugar, & spices in bowl. Beat

well & pour onto crust.

6. Bake at 350 for 20 minutes.

7. Combine nuts, 1/2 cup brown sugar, and 2 tablespoons margarine.

8. Sprinkle over pumpkin filling.

9. Return to oven and bake 15-20 minutes or until filling is set.

10. Cool in pan.

11. Cut into 2 " squares.
