OK Jan...I'll play...I grew up on a dairy farm, it is the cream from

cow's milk high in fat content( we had Jersey's and Guernseys and

there milk is really high in fat content ...the one with the big

brown sad eyes)....then it is heated fast and slowly cool, it is

quite rich..I don't think I have had any experiences with it, except

to say, in a cake recipe the cake is extremely moist.....Kathi in OK

I only know it is an essential part of high tea, mostly used overseas. When I

was in Ireland we had high tea where tea was served in elegant tea pots, dainty

teacups and saucers. Silver platters filled with watercress and cucumber

sandwiches, scones with clotted cream ending tea with tiny little tarts covered

with real whipped cream. Oh my, just thinking about it makes me want some.
