I'll keep the cancer risk in mind, but I'll probably continue drinking my " medicinal " glass of red wine every evening (of course, I'm not on MTX or other drugs that would preclude this). I won't count any wine I'm using for cooking though. I've wondered about what heating does to it, so I focus on drinking it straight up! I have a great recipe for vodka pasta. First ingredient - a shot glass full of vodka that you sip while cooking the sauce (additional vodka goes into the sauce). Very good! I am satisfied with the result each and every time. Too bad that I don't see many studies on the benefits of vodka. I'll tell you where to go! Please don¹t cheat yourself of your Merlot!! And remember, MORE than the recommended amount can cause cancer, so make sure you measure properly. I wonder if the bottles of wine that I use for cooking is good or bad for me. Cooking with wine changes the chemical structure and probably kills the antioxidants. Hmmmmm.
