Thanks for the tips, a! I haven't tried using a spoon to peel ginger

before. I'll give it a whirl and see if it's any easier. There are tough

spots where the peeler is useless and probably the spoon will be, too,

but I have a cool little curved knife that works on those.

Because the pieces of ginger are so irregularly shaped, I haven't wanted

to use the food processor. Maybe I'll throw all caution to the wind and

try that, too.

By the way, careful what you wish for, LOL!

I don¹t know if it is any easier, but scraping it with a spoon is

supposed

to be easier than using a peeler. Then you could use a food

processor to

slice it.

it in a

Hope it works . The processor should slice it the right size. I slice

radishes in mine and it does a nice job. I¹ve never had crystallized

ginger, but it sounds good.

The thickness would be fine, but I would have less control over the

shape of the pieces (as if it really matters - there are those OCD

tendencies coming out again). If I slice it, the result will be varying

sizes of circles for the most part; the processor would produce both

circular and odd shapes with more variation in size.

It wouldn't affect the taste at all, just the appearance. As my mother

would say, " Oh, the tyranny of detail! "

I had to go and buy a package of this crystallized ginger since I¹ve never

had it. It is pretty good, but I can see where real home made is better.

BTW , the package I got has all kinds of irregular shapes, so try that

processor and save your hands. The taste is more important than everything

being the same size.
