Guest guest Posted December 17, 2004 Report Share Posted December 17, 2004 Easy Butter Cake with Tart Lemon Filling Cake 2 cups All Purpose Flour 2 teaspoons baking powder 3/4 teaspoon salt 1 1/4 cups sugar 2/3 cup butter, softened 2/3 cup milk 1 teaspoon vanilla 3 eggs FILLING 3/4 cup sugar 1/4 cup cornstarch 1 cup water 2 egg yolks, slightly beaten 2 tablespoons butter 1 tablespoon grated lemon rind 1/4 cup lemon juice FROSTING 3 cups powdered sugar sifted 1/2 cup butter softened 3 tablespoons milk 2 teaspoons vanilla 1 . Heat oven to 350 degrees F. Grease and flour two 9-inch round cake pans. In large bowl, combine flour, baking powder and salt; mix well. Add all remaining cake ingredients. Beat at low speed for 30 seconds. Beat 3 minutes at high speed. Pour batter into greased and floured pans. 2 . Bake at 350 degrees F. for 20 to 25 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes. Remove from pans. Cool 1 hour or until completely cooled. 3 . In medium saucepan, combine sugar and cornstarch; gradually stir in water. Cook over medium heat until mixture boils and thickens, stirring constantly. Boil 1 minute. Gradually stir about 1/2 cup of hot mixture into egg yolks. Return egg mixture to saucepan. Bring to a boil. Cook 1 to 2 minutes, stirring constantly. Remove from heat. Add 2 tablespoons butter, lemon rind and lemon juice; stir until smooth. Cool 30 minutes or until completely cooled. 4 . In large bowl, combine all frosting ingredients; beat until smooth. 5 . To assemble cake, place 1 layer on serving plate. Spread filling within 3/4-inch of edge. Top with remaining cake layer.
