Maybe you can substitute some of these with other ingredients or just leave them out. That was one woman's story and recipes she encountered through her ordeal. I've noticed that I have to do alot of experimenting. I've made a chicken soup with chicken breast, veggies and water. Salt and pepper to taste. Its not oo bad. Also what is in Stock? Vegitable or chicken? can we eat it? Yesterday was the last day of school for this year, and my boss decided we would all change rooms for the next year. Needless to say that is not easy when the entire school has to move. I'm just glad I'm not one of the custodians - they have to move all of our cabinets and the students desks and chairs. Anyway, I better do this now or you won't get it for a while - have to be back for the new school year on Thursday July 1st. Tomato Soup 2 tablespoons olive oil 1-2 cloves garlic - crushed 1 onion chopped 1 stalk celery (optional), chopped 1 carrot, chopped 1 28 ounce can of tomatoes (chopped and mashed) salt to taste 1 teaspoon oregano and basil (tarroagon, thyme, or any others you like) 3 cups hot stock or water 1 and 1/2 cups cooked rice (optional) - I have never used the rice in this soup, but occasionally I have used rice noodles Saute the garlic and onion is the olive oil, add the celery and carrot. Cook until the onion is translucent. If using uncooked rice, add it to this mixture and saute until a little toasty (I usually leave the rice out). Otherwise add the tomatoes, rice, salt, herbs, and stock. Cook about 15 minutes and serve. I never make anything quite the same way twice - so play with the amount of vegetables, add others if you wish, add hot pepper sauce or a jalapeno pepper for a zing. Asian Style Soup (I've eaten this for breakfast) Again, I never do this exactly the same way twice - I don't measure things. 2-3 cloves of garlic, crushed and chopped olive oil 2 tablespoons or so chopped fresh ginger 2 tablespoons minced lemon grass (I found this in the frozen section of my Asian market) 4-5 cups water (or chicken stock) 2-3 teaspoons of chicken boullion ( 2-3 cubes) if using plain water Asian vegetables (your choice) Saute the garlic, ginger, and lemon grass in the olive oil. When the garlic is cooked (a minute or two), add the stock or water and boullion. Bring to a boil, simmer a couple of minutes. Pour over freshly cut Asian vegetables. I often add leftover chicken, cooked shrimp, or beef. The vegetables I have used successfully include a combination of the following (it's different everytime I make it). My daughter likes different vegetables than I do and a lot fewer of them in her soup. So if you are serving a family, you could let each person put the vegetables they want in their own bowl. bok choy green onion carrots romaine lettuce cabbage mushrooms water chestnuts bamboo shoots green beans snow peas Kate Kate,, both sound great ! Guest guest Posted September 7, 2004 Report Share Posted September 7, 2004 Baked Potato Soup 2/3 cup butter 2/3 cup flour 7 cups milk 4 large baking potatoes, baked, cooled, peeled and cubed, about 4 cups 4 green onions, thinly sliced 10 to 12 strips bacon, cooked, drained, and crumbled 1 1/4 cups shredded mild cheddar cheese 1 cup (8 ounces) sour cream 3/4 teaspoon salt 1/2 teaspoon pepper In a large Dutch oven or stockpot over low heat, melt butter. Stir in flour; stir until smooth and bubbly. Gradually add milk, stirring constantly, until sauce has thickened. Add potatoes and onions. Continue to cook, stirring constantly, until soup begins to bubble. Reduce heat; simmer gently for 10 minutes. Add remaining ingredients; stir until cheese is melted. Serve baked potato soup immediately. This baked potato soup recipe serves 6 to 8 ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ Creamy Vegetable Beef Soup 1/2 cup chopped green bell pepper 1/2 cup chopped onion 2 teaspoons butter 2 teaspoons olive oil 1/2 pound lean ground beef 1 cup tomato juice 1/2 cup diced potato 1/2 cup diced carrots 1 1/2 teaspoons salt 2 tablespoons butter 2 tablespoons flour 2 cups milk Heat 2 teaspoons butter and olive oil in a skillet over medium-low heat; sauté green bell pepper and chopped onion until soft. Add ground beef and cook, stirring and breaking up, until browned. Drain off excess fat. Add tomato juice, potatoes, carrots and salt. Cover and simmer 20 minutes, or until vegetables are tender. Melt butter in a saucepan over medium-low heat; blend in flour until smooth and bubbly. Gradually stir in milk and cook, stirring constantly, until thickened. Blend sauce with beef and vegetable mixture in the skillet. Heat through and serve.
