If anyone else has any Zucchini recipes, please feel free to send them to me, I am always looking for new recipes. Thanks. Enjoy!ZUCCHINI BREAD 5 eggs: 2 with yolk 3 without yolk 1 tsp vanilla 1.5 tsp baking powder 1.5 tsp baking soda 1 tsp salt 2 C sugar ½ C applesauce ½ C buttery olive oil (or vegetable oil) 2 tsp cinnamon 3 C flour 1 C craisins 2 C freshly grated zucchini • Preheat oven to 325* • Cream eggs, oil, applesauce, sugar, vanilla, salt, and cinnamon together. • In a separate bowl, sift flour, baking soda, and baking powder. • Add flour mixture to wet ingredients and craisins, and mix well. • Add zucchini last to mixture and stir just until blended. Bake at 325* in two loaf pans in the middle oven for 1.5 hours or until knife inserted off center comes out clean. (You might have to keep checking for doneness because this bread takes a long time to bake at 325*. Please feel free to experiment on a higher temperature setting.) Stay away from the green-colored olive oil because it tends to be grassy tasting. Use the yellow olive oils, which are not the cold- and first-pressed, virgin stuff, and which are heavenly smooth and buttery.
