Hi holly

My name is nancy (I don't post very often due to lack of time). I was reading

your post about your diet and was wondering what you eat. I am a vegetarian

(lacto-ovo) but do not eat healthy at all. I am very lazy when it comes to

preparing food. I rely very heavily on junk food and anything that is easy to

prepare (I don't even like to cook pasta). What do you eat if you eat a vegan

and gluten free diet?

Any suggestions to easily improve my diet would be greatly appreciated!

Subject: RA without drugs

Hi - the name of the book I mentioned in the previous post is Diet &

Arthritis by Dr. Gail Darlington, a British Rheumatologist &

arthritis researcher. I maybe should point out that my progress was

gradual & consisted of cutting certain foods out of my diet,

exercising - also a gradual process, just walking further each day,

starting off with a few steps & slowing increasing the distance. I

took medication for over 5 years & certainly realise that there is

no option for some people & is correct to mention the other two

thirds of RA patients who need to take medication but sometimes there

are severe side effects from drugs and if like me they find some

relief from a mainly vegan, low fat & gluten free diet then it is

worth a try. I am certainly not cured but the improvement in pain

levels has made it worthwhile. I hope this gives hope to some of you

inflicted with this terrible disease.

Make largish amounts of several dishes and eat them as

leftovers through the week. Some I also freeze for

future meals. I find it actually easier to cook ahead

than worry about what to eat day by day. The only

thing I don't prepare ahead would be salads with

lettuce because lettuce doesn't keep real well.Because

there are no animal products and not much oil it seems

like stuff keeps fairly well.
