Guest guest Posted October 10, 2004 Report Share Posted October 10, 2004 Diabetic Thanks Bernie Ingredients 1 cup each butter or margarine, softened; canned pumpkin 1 egg 1 tsp. vanilla 2 cups flour 1/2 tsp. baking soda 1 tsp. baking powder 1/2 tsp. nutmeg 1 tsp. cinnamon 1/4 tsp. allspice 1 cup raisins 1/2 cup chopped nuts Directions Soak raisins in hot water for 5 minutes. Drain. Cream butter. Add pumpkin, egg and vanilla. Beat well. Mix dry ingredients and add to creamed mixture. Mix well. Add raisins and nuts. Drop on greased cookie sheets and press with a fork.
