Dark Chocolate Pudding

3 T Cornstarch

3 T Sugar

2 T Unsweetened Cocoa Powder

2 C Skim Milk or regular milk

1 t Pure Vanilla Extract

In a saucepan, thoroughly combine the cornstarch, sugar, and cocoa.

Add the milk and stir until very smooth.

Cook on medium heat, stirring constantly, until the pudding comes to a boil.

Lower the heat and gently simmer, stirring constantly, for 3 to 4 minutes.

Stir in the vanilla, pour the hot pudding into a individual serving dishes.

Serve warm or chill for at least 2 hours and serve cold.

Yield: 4 Servings
