I had ordered my collards, swiss chard and kale from a few organic farms all winter long. Because I couldn't make the drive, I had to go to the store and attempt to find things instead. Brought them home and cooked as usual. Results were really disgusting - very tough tasting and lack of flavor. The stems were too tough to eat. So my consensus is? The local plants are more tender and much better tasting! Go with them whenever possible. If you don't think you have access to local produce, try googling " Locally Grown " and see if there is a market anywhere near you. You still have to do research and figure out what practices each farmer uses. I have seen pretty broad differences in quality, quantity and diversity in products. Carol S.
