Every sprouting seed will make a plant and that plant will make seed when it's old enough. Only thing to keep in mind is if you keep different family members too close they may cross and hybridize. Example: broccoli, cabbage, cauliflower, radish....beet, chard....alfalfa, clover, bean, pea.... You would just be doing some traditional gardening and going for seed harvest rather than produce. Here is a pic: http://photobucket.com/albums/jj628/mealmasters I just let the plants run wild-I have spring onions that are still producing seed 5 years after planting!
