Hello Donna :-) I only take the eggs out shortly before eating. If you leave them exposed to the air (even in the fridge!) they will mold very quickly. The acidity in the liquid will keep them sound and clean. Vinegar is quite a good preservative, especially with the salt and pickling spices added.
