hello Margret

when i make my next batch of pickled eggs following the notes you've given, do

the finished pickled eggs stay in the brine until all are eaten or after the

pickling period, do i need to lift them out and store in the frig?

Hello Donna :-)

I only take the eggs out shortly before eating. If you leave them exposed to

the air (even in the fridge!) they will mold very quickly.

The acidity in the liquid will keep them sound and clean.

Vinegar is quite a good preservative, especially with the salt and pickling

spices added.

many thanks, Margret, for sharing your knowledge. more questions:

sounds like refrigerating finished pickled eggs is optional, true?

how long can the eggs stay in the KT pickling liquid and still be tasty?
