Up north we would snip off the stalks of fresh herbs, bundle them up and hang them up to dry. But if you live in FLA, it might be a little too humid to do that ( mould growth). Yuck! So, if you don't have a dehydrator, if you lay your herbs out on a tray in the oven (toaster oven works great!) it should come out OK. BUT, and a big BUT it is ... keep the heat down low!! 100F or 30C should do the trick. What I generally do, is dry certain herbs together in a bundle. then, when I make soup or stock, I wrap the bundle up in cheese cloth and add it to the broth. No mess.
