It's all a matter of feeding the Kombucha culture accordingly. I found this very good site which explains Jun excellently. I might even try Jun-Boocha myself, which is a speciality Kombucha. Once I get mine and I get it started and you have not found anything, I can def. share. I hate waiting..... My JUN source wanted to wait til it was cooler, to ship to me. She is in WV.
