I found that I can bake pretty good stuff as long as I use a recipe that calls for 1/2 cup of flour or less-I substitute a gluten free flour with a bit of xanthan gum added. (Xanthan gum is natural and gives cakes it's chewiness-1 teaspoon per 1 cup of flour). Now that I'm looking I was surprised at how many good recipes don't need alot of flour. I made incredible Death by Chocolate cookies! (be happy to share recipe with everyone-email me!) Question-can you tolerate oats? They don`t care what they use.. I do.. Guest guest Posted January 4, 2011 Report Share Posted January 4, 2011 Don't know if this will be helpful but when I had a severe reaction to wheat one day and I presume it was because of gluten I eliminated all gluten grains from my diet except for oats because I read somewhere when I was researching gluten that oats were found not to have gluten after all.
