I would use it, but that's me. Sounds like you have a viable SCOBY

and strong starter to me.

I second that motion and your Vinegar is perfect for starter fluid.

What you have is ideal  and Im looking forward to the day when I also have this

situation.

Yes, I third this!

A marvellously acidic way to start a new brew. Nothing better than aged

Kombucha vinegar!

You may find that the brew will take longer to get going as the yeasts will

have gone somewhat dormant, but that is not a bad thing.

If you see it through, you'll end up with a really nice tasting KT.
