Just leave all the scobys as they are, they merrily partake in the

fermentation process wherever they are in the jar.

When your ferment tastes as you like it and you strain off the KT, you have

the choice to either continue with all the scobys, or to start a scoby

hotel which would give you lovely acidic KT for every new batch and/or

scobys+acidic starter to share with others.

S c o b y H o t e l is simply a glass jar with KT liquid in which float

your redundant scobys. These consume even more of the resident sugars and

leave the liquid really acidic, making it into the perfect anti-mold acidic

starter for any new brew.

After taking out of the 'Hotel' the starter liquid you need, just top the

hotel up again with some newer KT. Don't use sweet tea, as this will

stimulate the yeasts in the brew too much.

The acidic liquid in the scoby hotel gets balanced in favour of the

bacteria side, allowing the yeasts to fall a bit dormant. This has the

effect of preventing too rapid a fermentation and thus a premature

souring of your batch. Balancing toward the bacteria side will give you much

better tasting Kombucha Tea Tonics in the long run.

You cover the scobyHotel the same way as you do your usual fermentation

jar to keep clean inside. Your redundant scobys will keep good in the hotel

for many months and even years.

Scoby hotel is a brilliant thing to have - I use it all the time!

Next time cut that larger scoby to fit your jar,  doesn't have to be a perfect

fit   just one thats manageable.  Sounds like your brew is working just fine.

Subject: Twins!!!

Today is my 6th day of my first ferment.  I think that I am having twins.  There

is definitely a scoby growing on the top.  It looks like there is also a scoby

growing on the bottom.  The original scoby was too big.  I got it from some dude

who had a larger jar than I am using.  So the mother is sort of stuck in the

middle and the two darling babies are one on the top and one on the bottom, I

think.

If this is the case, what should I do?
