The stringy KT gets strained through a tea strainer which leaves the stringy yeasty bits behind. These are neither dirty nor bad for the brew, so I leave them be. You will find that even the KT in the decanting jar, will just after a day develop yeasty ooglies, which will easily strain out before drinking the KT ... if you are squeamish. ;-) > 1...Does it change the taste ? That is why I recommend the use of Kombucha vinegar (KT which the yeasts and bacteria have completely depleted of sugar. If you are REALLY lacking acidity, add a few tbsps of distilled vinegar over your brew. Distilled vinegar is culture-free and does help the brew to kick start and also will provide protection against mold.
