It is only o.k. with distilled vinegar, which raw vinegar isn't.

I just wriggle the scobys in their own KT. The stringy KT gets strained

through a tea strainer which leaves the stringy yeasty bits behind.

These are neither dirty nor bad for the brew, so I leave them be.

You will find that even the KT in the decanting jar, will just after a day

develop yeasty ooglies, which will easily strain out before drinking the

KT ... if you are squeamish. ;-)

Only if you use any vinegar other than Kombucha vinegar.

That is why I recommend the use of Kombucha vinegar (KT which the yeasts

and bacteria have completely depleted of sugar. If you are REALLY lacking

acidity, add a few tbsps of distilled vinegar over your brew. Distilled

vinegar is culture-free and does help the brew to kick start and also

will provide protection against mold. (I have used distilled malt or

rice vinegar - water is not good to use, because it neutralises the

acidic mantle on the scobys and gives mold an easier foothold.

As I said, the stringy stuff is NOT dirty, it's part of the life of

Kombucha! You'll find some in there:
