Carolyn,

A ceramic knife is really good until you drop it. They can break very

easily if dropped, and that will keep me from ever getting one.

As for the other knives that you used that didn't cut well, I'll bet

they needed to be sharpened. I have a sharpening steel in my kitchen

drawer and use it frequently.

I'm sure her knives needed sharpening.  Mine are very sharp and  don't have a

ceramic one.  but where else could you get a ceramic knife and ceramic peeler

for $14.95?  I bought it mainly for the peeler but the knife worked great,

too.  Sure if it is dropped, and they may drop it, it will have been worth it

as they have the peeler which I paid that much or more for by itself.  For the

cost, I thought it was great. Most ceramic knives are $70 and up.  It did have

a cover for it as well to help protect it.  I don't think it recommended

putting it in the dishwasher.  I went to a cooking class last night and they

usually use ceramic peelers  and they had a metal peeler but it sure worked

well, and they had ceramic knives for most of us to use.  The food was way too

salty though.  My  husband didn't eat anything but dessert which was good but

was too much.  I could do the same thing at home and leave out the salt and it

would be fine.  But salt

makes the food taste better as it awakesns some taste areas on your tongue that

enhances the taste.  But if we don't use as much salt, then we can taste the

salt  better.  Has asparagus cooked in lemon and zest and then wrapped in

proscuito with Borsin cheese on it.  Could have used a lot less of the

proscuito. Wow was that salty.  Had little pieces of skirt steak (really

little) marinated in lime, lime zest and jalapeno., and garlic and that was put

in little cups of cucumber (just bites but had to use fork as about 1-1/2 " of

cucumber).  Then the best thing, little tiny phyllo cups (store bought) with a

wonderful chciken taragon salad in them - about 2 bites.  Those were delicious

and the thing I am likely to make.  and then cannoli (mini), maringue kisses

(cinnamon, whipped egg whites and sugar) baked in oven and then a melted

chocolate put between the little meringue kisses.  Then we had a good blueberry

scone made with dried blueberries

and a home made strawberry jam.  We all took part in making things.  The

scone and the chicken cups were the highlight.  This was for a mother's day tea

but it was full on mothers day and this was a hold over group.
