Guest guest Posted June 26, 2012 Report Share Posted June 26, 2012 I have successfully made milk and water kefir with a partial covering ie: a bowl inverted over the mouth of the jar, a loose plastic baggie over the top, or even a sprouter top with the smaller holes. I have always done it this way, because that was how I was instructed to do it, and haven't had any problems. This is true of both water kefir (AKA SKG) *and* dairy kefir. Some folks ferment kefir covered in attempt to increase carbonation.
