I have successfully made milk and water kefir with a partial covering ie: a bowl

inverted over the mouth of the jar, a loose plastic baggie over the top, or even

a sprouter top with the smaller holes. I have always done it this way, because

that was how I was instructed to do it, and haven't had any problems.

Actually, you can ferment kefir either way, covered or not covered.

This is true of both water kefir (AKA SKG) *and* dairy kefir.

Some folks ferment kefir covered in attempt to increase carbonation. (or in the

case of dairy kefir, to keep smell at bay, when some in household are sensitive

to that odor.)
