Only vegetables husband would eat when we met were white potato (baked-dry; mashed & French fries), corn, iceberg lettuce, fried eggplant, raw carrot & green beans (RARELY for last two). I tried explaining corn & potatoes aren't veggies. He'd eat marinara & BBQ sauce were tomato but nope nothing doing Kids followed his pattern except son would come in & eat eggplant as I was frying until his sister told him he didn't like it. This was also true of legumes & grains. They'd eat rice but no legumes. What darling husband doesn't know is about a year ago our mashed potatoes nos have turnips. Our salads have expanded to include several different veggies. He now eats lentils, barley, whole wheat pasta, brown rice & few other things. I'll throw in sprouted lentils to lentil dishes, various bean sprouts to stir fries. I also try to sneak in a little 3 garden & /or broccoli sprouts to salad but I have to make sure I have bags out that I'm adding to my salad or he gets suspicious.
