Guest guest Posted June 26, 2012 Report Share Posted June 26, 2012 Actually, you can ferment kefir either way, covered or not covered. This is true of both water kefir (AKA SKG) *and* dairy kefir. Some folks ferment kefir covered in attempt to increase carbonation.
