When the leaves on the mung beans turn green they are going to be bitter.

Everyone eats their sprouts at the stage that they like best so it is best to

taste them frequently and determine what stage you like them at and if you like

them big you might try keeping them in the dark. I personally only let them grow

to less than one inch long, I think that at that stage they make a sweet and

crunchy addition to my miso broth and other soups, far better tasting and more

nutritious than any cracker.

I'm sorry about people not trimming the posts. I don't think you are going to

get any compliance here. Folks either refuse to do it or don't know how. So if I

were you I would stay away from the digest format. Either get the individual

email format or read the list on line. That's all the better I can suggest since

this is an unmoderated list.
