Many meals in Turkey start with mezze, which is a collection of dishes. You take a little of each to make a salad starter. They are heavy on olive oil and typically use lots of ingredients like eggplant, zucchini, tomatoes, olives, cheese (a feta type and one which is verrrry salty), cucumber, eggs, minced lamb, vine leaves, rice, mayonnaise, herbs and spices, yoghurts, mint, marinades.
