Question about flax and chia greens

I have grown them in the past with great success but about 7 days ago (in the

middle of a hundred degree heat wave) and I WAS watering them every day but they

were growing on coffee filters, well the smell hit me and I tossed them all. I

had used the Debbie Myers Green boxes turned upside down and left them covered.

While we might not be in yet another heat wave, I just put up 5 new batches. I'm

growing them on Sure to Grow Mats. Once I see the little sprouts, do I then

remove any covers? I just want to make sure.

This is how EW says to do the pea shoots so I'm imagining the same rules apply??
