Saw a note about Spelt and just wanted to say that we were able to eat Spelt

for about two years before Isaac got really sick but I wish we had not. I

wish we had started the gluten free diet, rather than the wheat free diet

earlier.

Spelt has as much gluten in it as wheat though it is a different chemical

compound. Oats are controversial because they say there has been cross

contamination with wheat but oats did not originally have gluten. It is now

fairly easy to by " pure " gluten free oats. Spelt is a member of the wheat

family and therefore it has gluten.

We used Spelt because Isaac tested positive to wheat allergies but I did not

see the healthy, positive behavior change until we went gluten free. Going

wheat free just helped with the allergy symptoms. Going gluten free, casein

free (and his other food allergies) free really helped him control his

behavior, calm down, even him out..you name it. It has been much better

than any of the medications we tried that just made matters worse.

While I have appreciated all the recipes and info folks have shared on

special diets I would give a load of thanks to anyone who has a really good

gluten free, yeast free recipe. We have some that sort of work for toast

but nothing really good for sandwiches.
