Not sure surprised is the right word but you are such a fount of information that it just seemed like you would be adventurous... I like that you can leave " cream " out of all of them and make them healthy, yet they still taste as creamy and delicious as " real " cream stuff. I often use white beans as a base, or almond/rice or other grain milk, ALSO made in the Vitamix-amazing machine.
