Guest guest
White flour contains gluten, which forms a sort of sticky mass when wet, more so when kneaded. Quinoa or non gluten flours won't have the same consistency-you generally need more of the non gluten flours, or add a tiny bit of tapioca starch, flax gel, or chia gel to give it a bit of the same gooines (is that a word, lol)? > > Now I have a question (I'm posting the link so you can see what I mean). > > How come when I made the flour-club soda mixture, it did NOT resemble the same as when I did the Regular white flour and club soda mixture. > > In this case I had to add some spelt flour and then all was fine. > > What (if anything) can I do next time to make a thicker batter? > > Here's the video. > > And Alan ate all the popcorn shoot patties, they were THAT good!! > > http://www.youtube.com/watch?v=n2IEeyz415Q > > Melody >
Guest guest
Hi. Just looked up tapioca starch. Loaded with carbs and it raises blood sugar so I'm not going there. I have both chia and flax. I can make chia gel by soaking some seeds and using the gelled liquid and adding that to the batter (next time that I do this). Not going to be for a while because as we go into summer I'm not going to be cooking that much. I'm doing salads and half sandwiches, etc. I'll be back in full force in October, doing my soups, etc. But for now. And I'm excited because I actually had a tuna fish sandwich for dinner (I took out all the inside of a semonlina roll) added some tuna, celery, and lots of sprouts and I was in heaven. Didn't have any popcorn patties left but thankfully I made zucchini ones. OMG, EXCELLENT. And I made some for tomorrow. Thank god I have a convection oven. Takes 5 minutes. I also saw the video about the guy who has been cooking his food in a solar oven for over 20 years. Amazing. Makes absolutely the BEST ice cream in the world and I get to eat it too!!! This afternoon I made regular Chocolate banana ice cream(no peanut butter). Less Calories and just as delicious. Guest guest
Well, I had NEVER made batter before. I was using bread crumbs, egg and stuff to make a fritter. So one day I'm in the backyard with the Italians and they are now growing pea shoots. My landlord said " Have you ever made batter with just flour and either club soda or seltzer " . I said 'What?? " Club soda or seltzer? " She said 'Yeah, they puff up really nice " I happened to have Club soda in my fridge and she was right. So I made the batter. Try it and see how it goes. Guest guest
I would most definitely look for an alternative to any tuna....a lot of it is coming up positive for bad stuffs related to the Japanese nuclear melt down......there are some great natural alternatives which have a similar taste and mouth feel........ http://glutenfreegoddess.blogspot.com/2010/07/vegan-tuna-salad-recipe.html<http:\ //glutenfreegoddess.blogspot.com/2010/07/vegan-tuna-salad-recipe.html> http://vegetarian.about.com/od/soupssalads/r/vegtunasalad.htm<http://vegetarian.\ about.com/od/soupssalads/r/vegtunasalad.htm> http://weheartthis.com/2010/03/01/so-simple-so-yummy-vegan-tuna-sandwich/<http:/\ /weheartthis.com/2010/03/01/so-simple-so-yummy-vegan-tuna-sandwich/> Re: I made Quinoa Flour (and Popcorn Patties) Hi. Guest guest
, very many thanks for that valuable post. It never once dawned on me that the tuna could be contaminated, yet we all knew about Japans nuclear melt down! It's something I feed my family a lot. The links are brilliant and things I can eat too (bonus!).
