You can also grate the zucchini, put 2 cups in a bag, and freeze for baking over the winter. The bread is soft, moist, and the tomato soup adds a crusty top. 2 C grated zucchini 2 eggs 3/4 C oil 1/4 C milk 2 C sugar 1/2 Can condensed tomato soup 2 tsp vanilla 3 C flour 1 tsp baking soda 1 tsp cinnamon 1/4 tsp cloves 3/4 tsp allspice 1/2 C chopped nuts (optional) 1/2 C raisins (optional) Mix together the eggs, oil, milk, soup & vanilla. Add in the dry ingredients. Blend in the zucchini, nuts, and raisins. Bake at 350 in greased loaf pans......usually an hour or longer......till knife or toothpick comes out clean.
