It will give you a whole new understanding of fats and the part they play in our diets. Most (if not all) polyunsaturated fats change to trans fats when heated. I, personally, would never use Canola oil (it's a GMO), and I use mostly saturated fats or olive oil (monosaturated oils). Why? The book will explain it much better than I do. Also, coconut oil has been helpful in the treatment of alzheimers Now, food beliefs are right up there with religion and politics in terms of divisiveness on forums. I don't press my " learnings " on anyone and I have watched some really great people leave the forum because of " food police " behaviors. OH, how I WISH I had had someone to help me learn about such things when I first started trying to improve my eating habits! I would have given anything to have READ the knowledge in a group that I have largely learned from ending up in the ER with allergic responses. I apologize if I come off as food police-I try to respect others choices in foods, but I WILL continue to share the knowledge I have earned over the years, since I assume people come to groups like this in an effort to improve their health to begin with. I was (and still am) shocked at what is allowed in our food supply, so if I can help share information that would have be soooo helpful to me, so I will continue to share what I have learned, and hope it doesn't offend anyone. Leave your expensive cold press extra virgin olive oil for salads. You can google benefits of coconut oil to have an understanding why coconut oil is good.
