Now I do one cup of flour (you can use spelt, whole wheat, ANYTHING BUT WHITE, and one cup of club soda. You can double or half the portion to make as many or as few as you wish. To the batter you add whatever seasoning you wish, garlic, onion, etc, I heat up some Sunflower oil in a pan. And in the batter I throw in some popcorn shoots, some pea shoots, some sunnies (actually whatever ou wish to put in a patty). Then I take a tablespoon of the mixture, put it in the hot oil, let it get nice and brown, flip it over, drain on paper towels and VOILA!!! you have patties. And the next day you re-heat in a convection oven and it's as crispy as when you first made it. Servie with applesauce or a dollop of whatever suits your fancy. They really are to die for!! Guest guest Posted June 6, 2012 Report Share Posted June 6, 2012 I haven't tried them yet. They did the batter by dipping in a mixture of milk and egg with seasoning and then dipping in flour and back into the milk and egg and back into a mixture of the cornmeal and flour cornmeal. Then they cook in oil about med to med high. Has to cook so the inside cooks too.  They used the pickles cut in long wedges but I was thinking about doing the small dill pickles (baby ones) and then battering them and frying. I don't eat much fried but going to have to try that. And you patties too when I get something to grow them in. soon.  Carolyn Wilkerson  To: sproutpeople Sent: Wednesday, June 6, 2012 10:37 PM Subject: Re: A question for Melody  Fried pickles are very common here in Western NC-most restaurants sell them, as well as street vendors. Club soda is used in things like tempura batter to keep it light and airy. I haven't eaten fried foods in many years, but I used to devour them! Guest guest Posted June 6, 2012 Report Share Posted June 6, 2012 You have never heard of them?  They even have fried corn on the cob. I prefer the fresh cooked corn though. I like to pout ears still in the husks in the microwave with a bit of water on them and then cook them and eat with butter and a little salt on them. I can't say it was bad to eat the fried battered corn, but I just liked fresh cooked better. Just didn't taste like corn so much. They are cut in shorter pieces and breaded (not sure what that is but I suspect it was part flour and part corn meal. I might try that once again just to remember what it tastes like but Idon't think it will be a favorite. , have you ever tried the fried pickles? If I get enough cucumbers out of the garden, once I finally plant them, I am going to make some pickles from scratch. I mayhave to borrow a hot pack kettle to cook them in (and the canning insert). I used to have one but have no idea where it went.   I am sure that someone at church has one though. However, can make them fresh and keep in refrigerator a week or so. My grandfather made them. His were like bread and butter pickles which are my favorite now. As a kid I loved dills but now I like the baby dills more than dills. My tastes changed.  Please don't tell me how bad they are for me. " They are in some kind of batter and are served with a spicy sauce for dipping. I think some version of Melody's batter with a reduced calorie dressing would be a good replacement. (Walden Farms has 0 calorie, 0 fat, 0 carb dressings, like Chipotle Ranch, that might be good.) I don't know much about cooking, but it might work.
