Guest guest Posted December 6, 2008 Report Share Posted December 6, 2008 I agree with Lori. I use my " old " recipes and just substitute for the stuff my son can't have. If you need to be GF as well as dairy free, then one cookbook I read recommended that for each Cup of " flour " (GF) that you use, use one teaspoon of xantham gum. I continue experimenting and my family can't tell the difference between the GFCF cookies/breads etc and the " old " stuff.
