Guest guest Posted October 27, 2008 Report Share Posted October 27, 2008 This is the time of year my thoughts turn to pumpkins... thought I would share my favorite pumpkin recipe with you all!!! 1 cup softened butter or margarine 1 cup sugar 1 cup brown sugar 4 eggs/egg substitute 1 cup pumpkin 2 3/4 cups GF flour 2 3/4 tsp xantham gum 2 teaspoons baking powder 1 teaspoon baking soda 1/2 teaspoon of salt 1 tablespoon pumpkin pie spice 1 cup pecans or raisins or chocolate chips Preheat oven to 350 degrees. Combine butter/margarine with both sugars until light and well creamed. Add one egg at a time, blending well between each egg. Add 1 cup pumpkin and blend well. In a large bowl, combine all dry ingredients (flour - I use 2 cups GF flour mix, 1/2 cup sorghum and 1/4 cup quinoa... but you can use 2 3/4 all GF flour mix.) Add pecans or raisins or choc. chips to dry mix. (Our favorite is chocolate!) Add dry mix to the rest and blend just until mixed. Pour into 2 8 " bread pans and bake for 50-60 minutes or until toothpick comes out clean. I like this in muffins which you only bake for 25-35 minutes or until toothpick comes out clean. They freeze great and my whole family loves them. It makes about two dozen regular size muffins. Hope you enjoy this as much as we do!!!
