Hi Sue, when we used not-quite-white sugar it didn't work for us. We've since

stuck with white sugar. We also found that the organic Qi green tea bags have

worked well for us.

Hi,

I doubt there's such a thing as an organic white sugar - too much processing,

too many chemicals and it's against the whole idea of the pure and natural

organic product.

I looked for organic white rice flour and couldn't find that for the same

reason. I bought a flour mill attachment for a Kenwood chef and made my own.

Grinding the organic sugar might be an option if it's anything to do with the

size of the crystals?

I have had no problems using any kind of sugar with Kombucha. I've used Rapadura

and other brown sugars with success, however i haven't been making Kombucha for

a long time. Sandy did you find non-white sugar failed on the first attempt?

We tried unrefined sugar at first but found that the fermentation took a long

time and the scoby didn't really seem to thrive. With white sugar, it worked a

lot better and we never really looked back. The " Kombucha Tea " book from the

Kombucha Tea Network recommends white sugar but also lists other sugars that

will work but with various drawbacks. There's also a pretty good summary of the

Do you use anything for keeping the culture warm, or do you keep it in the room

temperature? I got a nice huge glass container with a spigot and I would love to

have a continuous culture growing.

what about using d-mannose or sweet crave as good sugars for kombucha from

naturee supplies at www.dmannose.co.uk.....

Hi. Weston. A. Price just advise using unhealthy white sugar. We have been

making kombuucha using Aldi's white sugar for a year now. It has worked really

well, really likes it and is doing well on it. . X
