We've started making a flat "bread" with chickpea flour and have found it is very tasty. This sort of flat chickpea bread is traditional in other cuisines, e.g., as socca bread. There are various recipes on-line (and videos on youtube). We soak chickpea flour (also called gram flour) for a few hours, or overnight, with equal amount of water. Then add some oil and salt and cook for 15-20mins in a very hot oven. Comes off a pyrex baking tray ok (but cleaning the tray takes a bit of persistence). Next we may try a sourdough or soda variant. I'm guessing it would be crumbly (?) without one of these ingredients but I'm hoping to have a go.
