We've started making a flat " bread " with chickpea flour and have found it is very tasty. This sort of flat chickpea bread is traditional in other cuisines, e.g., as socca bread. There are various recipes on-line (and videos on youtube). We soak chickpea flour (also called gram flour) for a few hours, or overnight, with equal amount of water. Then add some oil and salt and cook for 15-20mins in a very hot oven. Comes off a pyrex baking tray ok (but cleaning the tray takes a bit of persistence). Next we may try a sourdough or soda variant.
