Guest guest Posted June 22, 2006 Report Share Posted June 22, 2006 My mom called it pudding delite, I call it whatever I remember to call it, cool whip delite, pudding delite, lemon supreme, blueberry chesecake whatever stuff, you know that stuff with the cool whip? LOL (I do not usually eat cool whip, usually I hate it, but in this desert I do eat it and LIKE it, LOL, and altho some quick and easy recipes claim this is " cheesecake " in here.the middle layer? I do not usually like quickie type cheesecake of this sort, BUT again, LOL..I like it here just fine.) 1st layer says 1 cup flour, 1/2 cup melted butter, and ground nuts optional, Well, I double this flour and butter and use one small pkg of ground pecans. I double this becuz I am too lazy to try to be patient while spreading the amount into the bottom of a 13 by 9 pan. That listed amount makes a nice thin crust but, it takes time to get that little bit spread. SO suit yourself, follow this recipe or double it. Or skip it and use a graham cracker or cookie crust. LOL (I have done that, as well, whatever floats your boat) 2nd layer is 8 ounces softened to room temp cream cheese, 1 cup powdered sugar, 2 cups cool whip. Mix on low. (I do not measure the cool whip, I use approx half of a larger size container and I mix the cream cheese and powdered sugar first then mix in cool whip) Spread on cooled crust. 3rd layer- 2 pkgs chocolate or lemon instant pudding mix, 3 cups milk, (OK well, I use AY flavor pudding mix that strikes my fancy at the moment. I also sometimes use one large pkg instead of 2 small. I have used the pudding mix that you cook, but it is best if you first cool it, before using it for this. I have also made this with blueberry or lemon pie filling. I imagine you could prolly use just about any pie filling you want to) 4th layer- spread 2 cups cool whip on top. (again, now I use the rest of the large container of cool whip) Now, I have used food color and dyed the cool whip for the top layer. (I was making it into a birthday cake, LOL) I am certain you can use flavored cool whip if you wanted to, like chocolate or strawberry or french vanilla). I suppose you could leave the top layer of cool whip off if you wanted to. (but I like how all the layers look) I have also used sprikles or colored sugar on top to make it more festive. Mini chocolate chips or ground nuts also jazz it up. And I have stuck choco chips or bananas inside, too.I just cannot ever decide exactly where I want them, chocolate chips seem best between the cheesecakey layer and the pudding layer, but..you can experiment for yourself. And yes I have made this " low fat " or whatever, using things like non fat or low fat pudding mix, cream cheese and coolwhip, but, it does not set up quite as well. And for thicker layers of everything I have made it in a 8 by 8 or 9 by 9 square pan on occasion, as well. (or you can half the ingrediants for the layers,) My fav is chocolate followed by lemon followed by blueberry. Hubbys fav is butterscotch followed by banana.
