It's really good, without all the fat of store bought granola! Preheat oven to 300 degrees. In one bowl mix 6 large eggwhites 6 tablespoons of cinnamon (I used allspice instead) 6 tablespoons of granular Splenda (I used stevia instead), 1 tablespoon vanilla extract and 1 teaspoon sea salt. Mix well. Then add the mixture to 6 cups of regular dry oatmeal and evenly mix/coat. Spray a cookie sheet (I used generous amounts of Trader Joe's fat free olive oil spray) and evenly spread the granola mix on the cookie sheet. Bake for 30-40 minutes, stirring every 10 minutes or so, breaking up the chunks. For me this made around 8 cups. Perfect for adding to fat free greek yogurt for a parfait or eating as is, just plain.
