I have been consuming raw dairy since March 2005 and feel great drinking and eating dairy products. I grew up on a dairy farm but had avoided dairy for many years due to reading that it causes mucus. raw dairy has not been a problem for me. I make cheese from my raw milk, but my friend said his tasted sour, so the last two pounds I made were done so with heat treated milk.....not pasteurized, just heated to 130 degrees and then cooled to the starting point of making the specific cheeses. I didn't find it sour, but I do share with others. It was very strong because I let it age a long time, but I thought it was good. Anyway, I'm sure you will enjoy your cheese as much as the milk.
